
What you'll need:

Chicken Breast - chopped into small pieces - 100-150g per person
Low Fat Choritzo - chopped into thin rounds - about 1/4 pack per person
Tin of Butter Beans (drained) - 1/2 tin per person
Antipasti Roasted Peppers (drained) - about 1/3 jar per person
Spinach (washed) - about 1 large handful per person.
Method:
1. Put the chicken and choritzo in a non-stick pan and cook through.
2. Add in the peppers and heat through.
3. Carefully scoop out the chicken, choritzo and peppers, leaving the juices in the pan.
4. Place the butter beans in the pan with the juices and heat through.
5 Arrange the spinach in the middle of each plate, sprinkle on the butter beans and then add the chicken and choritzo mix.
